Mama's Apple Cake with Hot Caramel Sauce By Emily Steinberg

For the Apple Cake:
2 cups sugar
2 eggs
1 cup vegetable oil
2 1/2 cups self-rising flour
1 tsp. cinnamon
3 cups peeled and diced apples (approximately 2 large Gala apples)

For the Hot Caramel Sauce:
1/2 cup butter (1 stick)
1 cup light brown sugar
1/2 tsp. salt
1 tsp. vanilla
1/2 cup evaporated milk
1 cup pecans (roasted & chopped), optional garnish

Combine the first three ingredients in a bowl. Add the flour and cinnamon to the mix. This is a very stiff batter! Add the apples and mix all together. Pour or spread into a 9 X 13 pan lined with parchment paper. Bake at 350 degrees for approximately 35 minutes. While cooling make the sauce.

Using an iron skillet, add the stick of butter and brown sugar on medium heat. Bring to a boil and stir constantly with a whisk. Add the salt, vanilla, and evaporated milk and remove from heat. Be careful as the pan gets very hot! Let cool slightly. Punch holes in the cake with a skewer. Pour the sauce over the cake. Let it soak into the cake and garnish with the pecans on top! Enjoy with a glass of milk...or vanilla ice cream!
