The Best Oatmeal Cookies
1 cup butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 tsp. vanilla
1 tsp. maple flavoring
2 1/2 cups old-fashioned Quaker oats
2 cups flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup walnuts (optional)
1 cup raisins OR chocolate (or any flavored) chips

Preheat oven to 350°. Roll mixture into balls and place on ungreased or parchment-lined cookie sheet for 12 minutes or until set and just starting to brown. Cool for a few minutes before removing from cookie sheet.
