Salad Ingredients:
1 cup carrots, julienned
3 tablespoons cilantro, chopped
3 tablespoons mint, chopped
2 handfuls of arugula
2 room temperature/cool poached chicken breasts (torn into thin strips with a fork)  
 
 
3 tablespoons honey
 
 
4 tablespoons fish sauce
1/4 cup lime juice
1/8 cup warm water
Blend all ingredients in a blender on medium to high speed until well mixed. Combine dressing one and dressing two together. Enjoy for the salad as needed. Makes a little more than four cups. Store in glass jar and refrigerate. Additional Tips:
